Oyster mushrooms come in shades of gray, brown, white and yellow. The color of the oyster mushroom is determined by its growing condition. When getting into the identification of oyster mushrooms the species you find is somewhat up in the air. There have been name changes to the species and much discussion as to the species related to the area of growth. If you find a oyster mushroom it will smell like a oyster some say, I think it has more of a clam smell, while others say it has an anise smell. The spores of this mushroom are white. The color will vary with the age of the mushroom. Pleurotus ostreatus is a late fall and winter fungus in Oklahoma, while Pleurotus pulmonarius is found summer and fall months. You will almost always find this mushroom growing on wood. In Oklahoma it seems to love trees that have fallen or on dead trees. As this mushroom ages you will see the edges start to turn up.

The oyster mushroom has been found to lower cholesterol. They have been used for blood vein and tendon problems. Oyster Mushrooms are rich in vitamin C, B complex and protein.

 Oyster mushrooms contain most of the mineral salts that are required by the human body.  Calcium, phosphorous and iron content in oyster mushrooms is double the amount available in beef, pork and chicken meat.
